About Hibachi K and Sushi
Hibachi K and Sushi is a Japanese hibachi kitchen at 7320 Buffaloe Rd, Suite 112, Raleigh, NC 27616, serving bowls off the flat top, sushi rolled to order, house-made drinks and a wall of imported Japanese snacks, seven days a week.
What we set out to do
Most hibachi in the Triangle is either a dinner-theatre steakhouse or a mall food-court counter. We wanted the third thing: a neighbourhood kitchen where a bowl comes off a real flat top in about fifteen minutes, the sauces are made in house, and the drinks are worth ordering on their own.
That is why the menu reads the way it does. Hibachi and teriyaki next to soy garlic, orange and bulgogi. Sushi rolled to order rather than sitting in a case. A drink list built around yuzu, dragonfruit, passionfruit and strawberry basil instead of a soda gun. And a shelf of imported Japanese snacks by the register, because that is what we grew up grabbing.
The room
Hibachi K and Sushi is a small dining room in the shopping centre on Buffaloe Road, between Forestville and Wakefield. There is free parking directly out front and no dress code. Most people eat in, some take a bowl to go, and a fair number stop at the snack wall on the way out.
We are open Monday–Sunday, 11:00 AM – 9:00 PM, and we hold a 4.6-star rating across 121 Google reviews.
The people behind the counter
Hibachi K and Sushi is independently owned and operated — a small team cooking every ticket to order rather than a franchise running someone else's playbook. If you want to know who is on the griddle, come in and ask; you will usually be talking to the person who made your bowl.
Sourcing
Vegetables are prepped in house daily. Sauces are made here from scratch, which is why we can bottle them. Sushi is cut to order, and rolls run on availability rather than sitting in a case — if something is off for the day, the menu says so. The snack wall is stocked with genuine Japanese imports, not domestic lookalikes.
How we run the kitchen
Cooked to order, not held
Nothing sits in a steam tray. Every bowl is griddled when the ticket comes in — protein, broccoli, carrots, onion and zucchini, sauced on the flat top and finished over your base.
One griddle, one menu
Hibachi, teriyaki, soy garlic, orange and bulgogi all come off the same flat top. Fewer dishes, cooked properly, rather than a menu nobody can execute.
Sauces made in house
Soy garlic, orange, bulgogi, teriyaki, crying tiger, yum yum and white sauce are all made here. People started asking to take them home, so now you can buy a 16 oz bottle.
The snack wall is real
Pocky, Ramune, Calpico, Jagarico, Hi-Chew, Koala’s March, Binggrae. Imported, stacked on a shelf by the counter, and priced to grab on your way out.
